Inmaculada sits in the Andes of Valle del Cauca, where for over a decade the estate has studied and grown rare varieties, blending agronomic innovation with a strong focus on biodiversity. At an altitude of 1700–2000 metres, producer Jorge Castro personally oversees every stage of production, from varietal selection to drying.

This lot comes from the Geisha variety, processed as a Natural: cherries are hand-selected, undergo controlled anaerobic fermentation and are then slowly dried in a greenhouse. The result is a clean, bright, fruit-forward cup that captures the purity of the Andean terroir.

Sensory Experience

A lively, layered profile: bright lemongrass intertwines with brown sugar sweetness, while a fan of fruit — blackberry, tangerine, mango, red apple and peach — carries through from first sip to last. Juicy acidity, a soft body and a clean finish.

  • Filter: 6g per 100ml of water, water at 120ppm, 91°–93°C. Pre-infusion 30 seconds, then pulse pours for a total time of 2:30–3:00.
