Rumudamo is an ode to freshness and biodiversity from the highlands of Arbegona. Born between 1920 and 2330 metres, from smallholder producers guided by Daye Bensa, this anaerobic natural reveals the vibrant personality of Sidama.

Sensory Experience

On the palate, notes of ripe red fruit, light spice, citrus and floral hints take turns. The acidity is bright, the body balanced, and the finish clean and lingering with nuances of honey and lemongrass.

Filter: 6g per 100ml of water – 92°C, soft water (max 120ppm), continuous or pulse pour.

Espresso: 18g in, 45g out, 93°C, 27–30 sec extraction.

Premessa, non sono un'esperto di analisi sensoriale. Mi sono approcciato allo specialty, sopratutto al filtro da poco, pertanto, non riesco a riconoscere tutte le note aromatiche del caffè.
Indi per cui la mia recensione sarà per gusto personale.
Se dovessi dare le stelle al Rumudamo sarebbe 4, ho capito che gli anaerobici non mi fanno impazzire, almeno al momento.
Ho provato a giocare con un ratio 1:14 e devo dire che lo ho apprezzato di più.
5 stelle perchè, comunque, i ragazzi di sensorio sempre top.
